Are there any really big areas in Texas that allow both dirt bikes and camping?

In California, there were all sorts of places to both ride and camp. Not sure what the options are for Texas.

I see a few places that have 1-3K acres, but I was hoping that there are some large acreage areas that have trails that could take days to explore that also allow camping.

Anyone got any suggestions?

Barnwell Mountain Recreation Area (BMRA) - 1800 acres

Sam Houston National Forest has a considerable trail network
Check the TRH sub-forum on TON (texasoffroad.net) for trail maps and more information

Agenlina National Forest will be opened up for ORV use sometime in the near future - my understanding is TMTC (Texas Motorized Trails Coalition) is presently working towards this goal with the USFS.

Since you're in Austin - check with AMSA (also on TON) if you haven't already. Great group of people and they can help get you acquainted.

Red River Motorcycle Trails in Bulcher. Roughly 2500 acres and they have just opened up some new trails as well. It is arguably the best trail riding in the state. Camping is allowed. www.redrivermotorcycletrails.com

It is a bit of a drive from Austin but well worth it if you plan to spend a few days.

Yall left off the closest to him.
Hidden Falls Adventure Park, formerly Boulder Creek. I think the previous name scared people away. just outside Marbles Falls on the HWY 71 from Austin in the Texas Hill Country. http://hiddenfallsadventurepark.com/

Almost 3000 acers of off road heaven in the Texas Hill Country. I grew up at Muenster (Red River Riding trails) since the 70's and I would say this is an early version of that. but no sand. Trails are marked and one way. You have to like rocks and hills!!! (my personal favorite)

red river is one of the best, located in Bulcher Texas. They hosted red bull last man standing there. If you want to go a little farther north there is Draper, Oklahoma. The trails there are amazing as well. In Gilmer Texas they have swell trails. I would consider all of these for riding and camping. Good luck to ya!
